Pierre Koffmann is one of the most respected and influential chefs in the UK. He moved to London from France in 1972 and worked for Michel and Albert Roux at Le Gavroche before launching The Waterside Inn, which went on to win three Michelin stars. After that, Pierre was awarded three Michelin stars at this own restaurant La Tante Claire.
Along the way, he mentored some of the biggest names in gastronomy, including Marco Pierre White, Gordon Ramsay, Tom Kitchin and Jason Atherton. He has a reputation for being tough and meticulous in the kitchen, where he was know as The Bear.
These days, he is a little more cuddly, supporting and encouraging younger chefs and cooking for pleasure rather than accolades. He favours humble ingredients and loves potatoes for their flexibility and flavour.
